Happy Palm Sunday everyone, hope the weekend was good, yesterday I did a post about the wedding ceremony of Nigerian Billionaire Mogul Dangote's daughter if you haven't viewed the lovely photos you could check my recent post.
Today's recipe is for Coconut rice, its spicy, fun and easy to make. It can also be a Sunday special meal. Ingredients and cooking directions will be emphasized below. But first, I will run you through some key points in preparing this meal.
- First off we break open the coconut and extract the water, some people love to use it to make the food tastier.
- You then ground the coconut, that's after dicing it into little pieces. Some also prefer to grate it into little slices before extracting the water.
- Take the ground paste and squeeze or sieve the water. Put the coconut extract and the paste in separate bowls.
With this little preface you're ready to make the best coconut rice.
ingeridents
- 1 cup of white or brown rice, or your desired amount
- 1 can coconut milk or your coconut extract
- 4 diced tomatoes or tomatoe paste
- 3 fresh pepper or blended pepper
- 2 diced green pepper
- 1 big diced onion
- 1 little cup vegetable oil
- Salt
- 1/2 teaspoon of black pepper
- 1 small can of Kidney beans
- 3 stalks of Carrots.
- 1/2 cup of Peas
Directions
- Boil warm water and wash the rice twice with it.
- Then boil the rice in water for about 10-15 minutes. This is because youll be cooking it some more.
- Chop and dice the vegetables; carrots, onions, tomatoe if any and the pepper.
- Put them in a separate pot with the kidney beans and peas and boil for 5 mintues.
- Heat the vegetable oil in a cooking pot.
- Add the boiled vegetables; Carrots, peas, kidney beans, tomatoe and pepper paste
- Allow it simmer for a few minutes then add salt to taste.
- Add the coconut extract and a few sprinkles of the grounded coconut.
- Add the rice, stir and leave it to boil dry
- Sprinkle the diced green peppers on top and cover and let it simmer.
- When the rice is cooked dish and serve with the beef of your choice or garnish with coconut slices and fried plantain
